    Recipe:

    Fry salami slices until crispy, chop up and then set aside.

    Toast almonds and then set aside.

    Blanche rocket (arugula) for a minute or so, until soft and wilted, then remove from water and squeeze off any excess water. 
    Then combine blanched rocket, Toasted almonds, Ricotta, a little pecorino, a little parmesan, a glug of olive oil, season with salt and blend to a paste.

    Heat paste in a pan, then add almost al dente pasta and a little pasta water, finishing pasta in the sauce.

    Serve Topped with chopped crispy salami.
