So jealous!! I love raspberries, but they’re hard to find in my country and when I do manage to find some, they’re like 2 small handfuls for $13. The only raspberry desserts I’ve had are made with artificial tasting jam lol

Raspberry curd freezes well and is a terrific addition to cakes! I love having homemade curd in the freezer.

I made a raspberry streusel cake last week which was excellent! It won’t use up a whole kilo though. Maybe freeze some or do pavlova as well. How many people are you feeding the dessert to?

I’d make a raspberry pie. Buying raspberries is so expensive so I rarely make a purely raspberry pie (usually mix several berry types in there). It’s a real indulgent treat to make a fruit pie that is 100% raspberry. Add in some homemade vanilla bean ice cream and it’s just heavenly!

I adore raspberries! So jealous. I would make a raspberry cherry pie, maybe make 2 and freeze one. The rest I would eat over ice cream or just in a bowl with heavy cream.
