First time doing this diet while camping (and being vegetarian). This one was a hit even with the meat eaters (except the 16 year old who won't eat chickpeas).

Chimichurri
1/3 cup fresh cilantro
1/2 cup fresh parsley
1 clove garlic, minced
1 tbsp lemon juice
1.5 tbsp red wine vinegar
1/2 tsp basil
1/2 tsp oregano (I made these numbers up just like put some in and see how it tastes)
But if sage
Pinch of red pepper flakes
Olive oil (go with your heart. It needs enough to toss with the chickpeas but not like.. coated)

Mix all that together and let stand while you do the following

Chop 225g/1 small container grape tomatoes into quarters
1 can chickpeas drained and rinsed
Crumble feta

Mix everything together and let stand for an hour or so to maritatr (or just eat it)
