I Nicoised the hell out of this Niçoise salad – except for olives, which my mom doesn’t like. (My dad died a few weeks ago and my elderly mom wasn’t eating much – the combo of heat and grief is killer. This helped her out of her funk for a bit today and prompted her to actually eat – a victory!)
