Our vegan pasta salad combines fresh and crunchy vegetables with chewy pasta and a tangy Italian dressing.

Making it is easy, and you only need simple ingredients. The combination of textures and flavors is spot on.

⭐️ Ingredients
PASTA SALAD
8 ounces (230 grams) of arfalle pasta cooked in 2 quarts/8 cups/2 Liters water and 1 tablespoon/15 grams of sea salt.
1 can (15-ounces) (230 grams) of white beans drained and rinsed
2 cups (320 grams) cherry tomatoes quartered
1 heaping cup (150 grams) cucumber diced
½ cup (60 grams) olives
½ packed cup (90 grams) of sun-dried tomatoes preserved in oil, drained from the oil, and chopped
½ cup (100 grams) of corn canned or frozen. If frozen, boil it first.
1 (1 shallot) shallot finely chopped
3 tablespoons (1 handful) parsley finely chopped

DRESSING
3 tablespoons (45 grams) extra virgin olive oil
3 tablespoons (45 grams) lemon juice + grated zest of ½ lemon, optional
2 tablespoons (15 grams) mustard American or Dijon
1½ tablespoons (15 grams) maple syrup
1 teaspoon (1 teaspoon) dried oregano
½ teaspoon (½ teaspoon) garlic powder
1 teaspoon (1 teaspoon) salt, more or less to taste
⅛ teaspoon (⅛ teaspoon) black pepper

this is easy pasta salad make the dressing with extra virgin olive oil apple cider vinegar lemon juice maple syrup or honey mustard dried oregano garlic powder salt and black pepper close the jar and shake it until combined Now drain the pasta cool it under running water then add it to a large mixing bowl then add canini beans half cherry tomatoes CHP cucumber sliced black olives caned corn shallows or mild Red Onion finally chopped parsley then drizzle with a delicious mustard dressing cross until the ingredients are well combined then you can transfer it onto a serving platter easy right

    Q: Your Description screen's printed recipe added ½ cup drained sun-dried tomatoes 🍅 … you guys must really like 'em, but I'm scared to buy 'em cuz afraid i might hate 'em – need a little advice as to why you like 'em & what are they like to eat & chew & what do they taste like? Never had 'em B4.

    Are they leathery?¿? (That's what's in my imagination … like, the sun turns skin leathery & wrinkled over time) – that's why I'm perplexed why people would want to eat leathery & wrinkled tomatoes (unless it's winter & no fresh tomatoes to buy cuzza blizzards or something), especially during fresh tomato growing season. 🤷‍♀️ They don't seem appealing.

    When you have a chance, I'd luv a reply – ORRRRR if a viewer with sun-dried tomatoes expertise – someone to 'splain these Qz (no one i know has ever tried 'em, either) might tempt me to buy some.

  3. Swap the parsley for cilantro in some of your recipes. Or add both. Different level of flavour 😊
