today we’re going to be making keto tater tots out of something brand new and unexpected not really but we’re going to be including ingredients that you wouldn’t typically see in a tater tot the recipe is by Kayla Powers we’re going to be leaving a link to her Instagram account in the description below and in her recipe she combines cauliflower which is expected with something kind of unexpected and that is cottage cheese cottage cheese has been having a Renaissance not seen since the 1980s I think on keto low carb and other high protein diets we’ve made chips out of it we’ve made ice cream out of it and we’re just going to run on this train until we run out of tracks because uh when Trends happen jump on or be left behind jump on or we’re just going to be cooking meat meat exactly and green veg which is typically what we eat dayto day cuz it’s really boring so um when I saw this recipe I said sure we’ll see if it turns it into a tater top but before we get started we’re simple it’s technically a three ingredient keto recipe also trending you’re going to be needing sharp cheddar riced Frozen cauliflower and kage cheese the additions to this recipe you could add whatever you want we’ve decided to go with garlic onion powder salt pepper and because we have an entire bottle of this stuff not to say that you should buy it cuz smelling it kind of makes me ill the O mashed potato po flavoring and it’s not that I think it’s a bad smell but concentrated it just doesn’t smell right so can you imagine what that factory smells like no I cannot I think that I’m just really sensitive to smell or something because that we’re probably going to add this to half of the tater tots just because we don’t know how it’s going to react and we want to see if we can tell the difference between the tater tots that have it and don’t because cauliflower has a lot of flavor but the way this s and I tend to cook rice cauliflower is what we call and other people know call the dry cook method the dry cook method helps eliminate a lot of the moisture content in the cauliflower you can do this by popping the cauliflower out of the bag in a bowl in the microwave we do it for like five or so minutes and then we dump it into a pan and you cook it until it is completely dry that is going to take out a lot of the smell in cauliflower rice and sir and I have used this method we make Spanish style cauliflower rice and risoto and it just tastes amazing because you’re taking a lot of the smell out of it so I think they should give this a try because that video that we put up is years old and it still gets comments on it saying oh I never like cauliflower before until I tried this method try out the dry cook method we’ll leave a link to our other video that we did about this in the description below and that’s what we’re going to do first is cook the cauliflower using the dry cook method you have to microwave it Emily microwave I don’t think so either you do not have to microwave it but I feel like cauliflower we’re going to do about a third of this bag I feel that cooking it in the microwave is it cuts down on the time that it needs to actually thaw and release the moisture you’re pretty much like cooking it halfway and then drying it out in the pan when you do this our cauliflower is cooked smells cauliflower e we’re going to dump it into this pan that’s on medium heat and this is pretty easy don’t have to do much but you have to have patience here’s the test so when we swipe you can see moisture coming out we’re going to keep on cooking it until we see no more moisture there’s no more moisture left in the cauliflower that’s great that means that all of the moisture is out it’s not going to smell as much or taste like cauliflower so we’re going to move on to the next step which is blending 1 cup of cottage cheese I’m also going to be adding in some of the spices into this [Music] mix what’s with this tab let’s do I’m my boiling it cuz I that’s what I do maybe a teaspoon onion powder teaspoon no this is onion powder that was garlic this is onion powder teaspoon of onion and garlic powder but you can put whatever spices you [Music] want so here’s where we’re going to do a little experiment we want to try out the mashed potato extract in these to see what it does but we don’t want to do it in the whole batch because then we can’t tell the difference so uh we’re going to splitting up our cauliflower cottage cheese and cheese into two separate bowls so that we can make two separate toats in goes the cauliflower rice talk us through it in goes the cauliflower rice in goes our cheddar cheese some people didn’t add CH cheese and they said it worked out well too so if you only want to keep it with the cage cheese that’s one option I think I’m just going to put maybe this much okay this is our experience cint Bay um we are going to put a little bit salt and pepper mix it how many drops Emily I don’t know so in the past we’ve used like 20 drops or something I don’t know if I tasted it did you I don’t know it’s hard to tell yeah so that means that we are not using enough we’re afraid we’re too afraid maybe we should just kind of go they have an instructions on it or a guide no a four of a teaspoon okay that’s fine smells very buttery we’re going to have some that is just plain so that we can hopefully taste the difference mama I don’t know oh no no it’s giving it’s ging Jelly Belly butter popcorn Vibes that made me sick when I was little that’s a big Tater top fine I don’t know she made them pretty big in her video I don’t know if we need to go that big with the tater tot maybe like what a tablespoon there’s our first tot um let’s work off where the mashed potato extract is going maybe thank you we won’t remember in 10 minutes we’re going to be like wait what side is it can you make them more tear tot looking like they’re like blobs more like cylindrical how am I supposed to do that like roll it on yeah and then make the sides a little bit see that’s better it has to look like a Teater tot in the thumbnail they do it looks like a chicken nugget but okay see your Mastery at work I can’t see wait you’re crossing the line moving on to our next batch of we want them the same size so they all cook similarly SI barely on the line of we move it over a little bit there no offense to oh flavoring it’s just like I’m sure anything in that extract you know it’s just like very like buttery it’s potent anything that’s like an extract probably doesn’t smell that great let’s just be honest I think that sometimes you can just have negative connotations with certain smells like uh Bailey G cream Irish car shot one time we ran out of Coca-Cola and just did Jameson and Bailey’s I walked one step out of the house fell over good old days show the people they’re kind of big whatever this is our o side and this is our regular side right so the oven is preheated to 350 she said to cook it for 35 to4 minutes so we’re going to shoot for 35 and check on it then oh they have held their shape I was do you think they need a little bit longer than that or I don’t know if they’re going to turn brown they are starting to turn brown maybe we can put them in for minutes yeah I think they deserve to be a little bit long they actually look really good yeah we’re going to cook these for maybe 5 more minutes or so I’m hoping for a little bit more color on them and then we’re going to put them on a plate maybe serve up some keto ketchup and we’re going to go downstairs and try these cottage cheese tater [Music] tots here we are that one smells this is the o o flavor not to say that it smells bad it just smells buttery yeah buttery a nice color on it these are the ones without the mashed potato flavoring in them let’s just try it by itself H I don’t really taste cot of cheese you no pretty good kind it kind of reminds me of a tater top yeah the texture is kind of like a Teater top the thing is I feel like it’s not as crispy on the outside as a tater top typically is but the inside is kind of soft like a tater top um I actually like the little brown side better I wish we would have flipped it maybe halfway through M or even cooked it longer I like it it does remind me of a teer top especially with a ketchup yeah The Taste is I’m mainly just tasting cheese garlic and onion yeah and you know it’s pretty close yeah flipping them halfway probably would have given it a nice like Browning on all sides it might make it brown but it’s not going to make it crispy there’s a crispy factor to tert that this is missing but I like it if you rolled them in pork B deep fried them it would just be so many steps you know is it wored at that point all right let’s see if the the mashed potato flavoring did something I’m always nervous about this but oh it’s just that it’s it’s very much it’s too much yeah it’s we we found the limit we um put too little in uh the chips that we made last time yeah and we could barely taste it that’s the problem with some of these uh flavors is that it really is a delicate type of thing cuz if you put too much then it’s going to taste bad artificial yeah it tastes artificial like artificial like chemically butter it brings me back to that Christmas morning that my mother bought me the Jelly Belly flavor combo pack it was about this big had 100 different flavors in it and the last one I tried was the butter flavored and I just remember it wasn’t fun there were some odd flavors in that yeah and it just remind it brings me right back there and I was probably seven it’s probably my first memory yeah what does a potato really taste like anyway I don’t know but you see it doesn’t taste like that right but that tastes like butter to me so what does a potato actually taste like it will never be exactly like the thing even if it did taste a little bit like it I think people would still pick it apart these were good as is just a little bit more cooking a little bit more Browning and then you could dip it in some ranch right Ranch definitely get Ranch flavor it with things that make it taste like the thing that you want all   2. I dry my riced cauliflower on parchment in the oven from frozen. It absolutely works! Extra tip: don't forget the riced cauliflower in the cold oven before you go camping for six days. 😨

  3. My feeling is….if you don't like the smell of it before cooking than you won't like it afterwards. I also would have cut the size in half and flip them so they get really brown on both sides. Good job ladies!

  4. Maybe try adding some Keto Chow Baked Potato flavor? Or, just make tots out of leftover Chris Cooking Nashville Carnivore Mashed Potatoes. I bet that would work!

  5. As neither one of you already enjoying that"fake" potato essence, is day dump it.. Cut the ties. Good idea for those of tater tots.

  6. I bet if you were to take the tots out after they baked, sprayed them lightly with oil and then put them back in the oven at 450 degrees till brown (5-10 min) it would have a closer texture to tots. Tots are technically cooked twice. First at the manufacturer and then at a higher temp when you get them home. That will likely fix the texture issue. Hope this helps! Also thank you for your videos. They are terrific. It is nice not having to test everything for myself!
