Salad:

2.5oz spring mix

12 olives

Handful of cherry tomatoes

Quarter of an onion chopped

2 tablespoons of feta

Small handful of croutons

Dressing: (makes enough for 4 large salads)

1/2 cup EVOO

1/4 cup balsamic vinegar

Juice from one lemon

1 teaspoon of garlic powder

1/2 teaspoon of kosher salt

Freshly ground black pepper

Chicken: ( makes enough for 2 salads)

1 lb of chicken breast cut into small chunks

1.5 tablespoons of EVOO

1/2 teaspoon of chipotle powder

1 tablespoon of cumin

1 teaspoon of smoked paprika

1 teaspoon of kosher salt

Pinch of crushed red pepper

Combine the chicken with the EVOO and spices. Throw the salad together and make the dressing while your chicken cooks. Mix the dressing in, don’t keep on the side. Cool your chicken in the freezer for a few minutes before topping your salad with it.
