Loaded Baked Potato and Leek Salad🤤

5-6 medium red skin potatoes, rinsed
1 leek
3-4 green onion stalks, sliced
3oz yellow cheddar, grated (half block of @cabotcreamery) 
5 slices bacon, cut into bite-sized pieces

For the dressing
1 cup sour cream or greek yogurt
3/4 cup mayonnaise (homemade recipe in my previous post)
2 tbsps apple cider vinegar
1/2 tbsp onion powder
1/2 tbsp garlic powder
Salt and pepper

Fill pot of water ~1 inch taller than potatoes, heavily salt the water and bring to a boil prior to adding potatoes. Boil 15-25 minutes, until a fork/knife can pierce through. Meanwhile, cut leek in half and slice thin, removing white end and dark green end. Mix dressing in a small bowl. Set aside. Drain potatoes and slightly cool or rinse with cold water. Cut potatoes each into 4-6 pieces depending on size. To a large bowl add potatoes, cheese, leek, bacon and green onion. Pour over dressing and carefully toss until evenly coated. Enjoy!

never have I ever met someone who doesn’t absolutely love a loaded baked potato so why not bring it to a cookout in salad form I don’t know how many times I can express my love for potatoes on this platform but here I am yet again I felt a little inspired because potatoes and leaks go so well together so I had to throw that into the mix they gave this extra level of texture to the salad and as my mother-in-law would say it was a great way to sneak veggies into a dish also I am well aware that there are a lot of mayonnaise haters out there but please do not write off this recipe if you are one because you can always just substitute mayonnaise with more sour cream this is a great one that you could prep everything for ahead of time and when you need it just toss together enjoy

  1. If you want it truly next level, pour italian or french dressing over the cooked and chopped potatoes & mix well, before you add your mayo. You're welcome! 😉
