our readers keep telling us that this is the best meatloaf they’ve made and honestly the same is true for us Joanne’s doing her happy dance again and trust me this was 100% unscripted it was and I do really love this meatloaf we’ve got 8 oz of mushrooms which add incredible moisture and flavor half a medium onion a large shallot a few garlic cloves and half a bell pepper you want these to disappear into the meatloaf so finally chopping them is key at the stove melt some butter and a skillet and add your mushrooms cover and let them cook down a bit before stirring in the onion shallot and a bit of salt then when the onions are soft and smell sweet add the garlic bell pepper and cajun seasoning then cook for a few more minutes let the veggies cool for a bit then put everything together I’m adding crushed saltin crackers to a pound of ground beef and then need 1/4 cup of milk an egg egg yolk Dijon mustard ketchup and werer sauce when the veggies have cooled add them to the meat mixture and give everything a really good mix now form it into a loaf shape on a lined baking sheet and pop it in the fridge to firm up a bit okay now for my favorite part the meatloaf glaze this really is the best glaze we’ve ever made it’s a simple blend of ketchup dejon mustard maple syrup and musterer sauce slather it all over your meatloaf and let it chill in the fridge while your oven preheats once your oven is ready bake the the meatloaf until it’s cooked in the center then get ready to dig in and enjoy the most delicious meatloaf you’ve ever tasted if you make it leave us a review We love to hear from you see you next time
