this is how I make my perfect coucho aepe yes I use butter I don’t care it’s not traditional you can make it however you want and I can make it however I want so lots of starchy pasta water in and give it a really good whisk to thicken it up let it bubble away like this for a minute or two cooked pastorin and give it a really good toss and then I sprinkle the parmesan or piccino in a nice even layer and let it melt undisturbed for a minute or so this is my key to a silky smooth sauce take some tongs and spin it around and around and around keep going for 30 seconds or so until you get a beautiful silky emulsified sauce no clumps no stringy cheese it’s my death row dish and I hope you give it a try
