First time using the IR burner on my new grill to sear a steak!

    * Prime NY strip
    * Sous Vide 131 for 2 hours
    * 10 minutes in the freezer on a baking rack
    * Infrared searing burner on my new Napoleon Prestige 500 grill

    Not gonna lie, the crust doesn’t look as good as when I sear on the Big Green Egg or a cast iron, but the flavor and texture were amazing! One of the best steaks I’ve made.

  2. My 14 yr old Weber is in the way out, and Napoleon w/sear burner is high on my list of replacements!

    If I may…. Review the instructions on the inside of the lid. When cooking meats, you need to raise the grates. The lower position is for pan searing.

    Not sure that it will improve your experience, but it’s what Napoleon designed it to do.

    Why does that remind me so much of my trailer park cold days sitting in front of that ceramic propane heater? Just me?… ok
