I would never buy tomahawks, they are a bit of a wank, but I won 3 at a meat raffle and I've never cooked this cut before.

Let it dry brine in course salt, pepper and garlic, in the smoker till internal temp hit 125°f, then on to the grille to sear the outside.

    Pretty, but too rare for me. Have you considered a meat thermometer?

    One person says to rare while another says medium well. Just goes to show that either people have no idea what they are talking about when it comes to photos of steak.
