[Music] hey everyone welcome back to my channel I’m Amy well Summers here and today we’re grilling up some delicious juicy and Smoky Greek beef kebabs with a simple and flavorful marinade of honey mustard along with fresh Tangy daigi sauce perfect for summer barbecues or a tasty dinner any night of the week so let’s get started if you’re new around here I’m Amy join me in my kitchen as I create test and share easy to- follow recipes tips and techniques for seasonal and globally inspired dishes my recipes are bold and vibrant but totally approachable so subscribe if you’re new and if you just subscribed thank you so much and without further Ado let’s let’s Dive Right [Music] In today we’re using 1 and 1/2 lb of beef sirloin it’s a less expensive cut of beef and a great option because of its beefy flavor first we’re going to cut the beef into equal size cubes about 1 in thick the marinade in this recipe is so good you probably don’t necessarily need to splurge just allow at least 2 hours in the refrigerated marinade to tenderize the meat but if you do have a bit more to spin I would recommend using beef tenderloin it’s great for kebabs because it stays really tender without much work however I wouldn’t recommend chuck steak I avoid this cut of meat when it comes to kebabs while it’s a very flavorful cut of meat it can be way too tough in Chey for [Music] kebabs once we’ve cut the beef into equal size cubes we’ll put them in a bowl and work on the [Music] marinade and just a reminder if using wooden skewers we want to soak them in water for at least 30 minutes before we start using them in a large bowl we’re going to add all the ingredients for the marinade first 2 tpoon of regular mustard then 2 taspo of Honey about 2 tpoon of fresh lemon juice some zest of 1 Lemon half a teaspoon of paprika 6 tbspoon of olive oil 1 and 1/2 teaspoon of salt and 1 teaspon of ground black pepper 2 tpoon of fresh thyme 1 teaspoon of dried oregano and two to three cloves of [Music] garlic now give it a good mix [Music] Now cover the bowl with plastic wrap and let them marinate for at least 1 hour in the fridge you can also marinate them overnight so they soak up even more of those wonderful flavors okay while the beef is marinating let’s make our fresh suziki sauce start by grating the cucumber and squeezing out the excess moisture this step is crucial to avoid a watery sauce you can use either a tea towel or a cheesecloth to squeeze out the excess [Music] water once all the liquid has been squeezed out transferred to a bowl and set aside [Music] so to make the ziziki sauce we’re going to need a half a cup of grated cucumber a cup of Greek yogurt two cloves of garlic oops two cloves of garlic grated 1 tbsp of fresh dill finely chopped two tspoons of fresh mint finely chopped about a tablespoon of lemon juice juice 1/4 teaspoon of salt and 1 tbsp of olive oil in a mediumsized bowl we’re going to combine the Greek yogurt grated cucumber the chopped mint and chopped [Music] Dill lemon juice minced or grated garlic olive oil and finely salt then mix it all together until well [Music] combined then pop it in the fridge to chill while we prepare our vegetables [Music] once the meat has been fully marinated we’re now going to prepare the vegetables we’re going to cut the peppers and onions into about 1 to 1 and 1/2 in equal wide squares I’m using mini bell peppers but if you’re using regular size bell peppers cut them in half and remove the seeds the seeds are generally bitter so we want to make sure to remove them and get rid of them before cooking then we’re going to put them in a bowl and set them [Music] aside now we’re going to cut the onions the same size or try to get them about the same size [Music] then transfer them into a large bowl we also want to separate the onion layers as much as [Music] possible then in a large bowl along with the onions we’re going to add the grape tomatoes and the bell [Music] peppers drizzle with some olive oil and season with salt and pepper and stir everything to combine [Music] I’m also going to grill up some portabella mushrooms I’ve cut them in half add olive oil salt and pepper and gave it a good mix basically we want to alternate pieces of marinated meat bell peppers and other vegetables on the skewers but you can do it any way you like for me I like to begin with the red onion then a piece of meat then about two to three maybe even four pieces of vegetables [Music] then brush the kebabs lightly with the remaining marinade [Music] we want to preheat our Grill to medium high heat then Grill the kebabs for about 10 to 12 minutes 2 minutes on each side until nicely colored and cooked through make sure to turn occasionally until the beef is cooked to your desired dness once cooked through place the beef skewers on a baking sheet or a plate cover with foil and let them rest for about 3 to 4 minutes before [Music] serving I’m serving my beef skewers with some barley and and Greek salad with Suzuki on the [Music] side sprinkle on some parsley and a squeeze of lemon and you’ve got yourself a nice little [Music] meal these beef kebabs are perfectly tender and packed
