The Greek yogurt makes this potato salad somewhat healthier and lighter; it adds a pleasant tang, freshness, and beautiful creamy texture.

We like to use a lot of vinegar when making creamy potato salads, and this one is no exception; feel free to reduce it if that’s not your jam.

⭐️ Ingredients
2 pounds (1 kg) potatoes boiled, peeled, and cut into bite-size chunks
2 ribs celery thinly sliced
1 cup (120 grams) radishes thinly sliced
1 red onion chopped
½ cup (60 grams) dill pickles

DRESSING
3 tablespoons fresh dill finely chopped
½ cup (125 grams) vegan mayo or regular mayo
½ cup (125 grams) Greek yogurt or non-dairy yogurt
3 tablespoons (45 grams) apple cider vinegar + 1 tablespoon to sprinkle on potatoes
1 tablespoon (15 grams) mustard
1 teaspoon salt
¼ teaspoon black pepper
½ teaspoon smoked paprika optional, for garnish

this is our dill potato salad cook the potatoes in salted boiling water starting from cold water until fork tender then drain them and rinse them to cool down now peel them or not then cut them into bite-sized pieces and add them to a bowl while they’re still warm add a sprinkling of apple cider vinegar then add thinly sliced celery finally chopped Red Onion pickle cucumber and thinly sliced radishes now we’re going to make a delicious potato salad dressing with our homemade vegan Mayo but any May Works Greek style yogurt apple cider vinegar finy chopped Dill mustard and a pinch of salt wh scav until well combined then pour the dressing over the veggies and toss until everything is fully coated you can sprinkle with some smoked paprika easy right
