    Inspired by the Barbacoa episode from Netflix’s Taco Chronicles. Never been to Mexico (since I live literally on the other side of the globe) nor ate something similar in local Mexican restaurants. Combined the instructions from a few different recipes to produce this home-friendly barbacoa in banana leaves and steam-baked over the consomé overnight.
