these spinach and feta triangles are like mini spanac Coppa they are so delicious and easy to make they cook super quickly they’re easy to prepare they can be eaten warm or cold and I normally make a double batch and freeze half for those days where I just can’t be bothered cooking the ingredients are simple I’ll make sure to link the full recipe below for you and they make a super quick lunch or dinner you’ve got to have them with a squeeze of lemon juice and you can serve them with Greek salad a little bit of fiki and you’ve got something seriously delicious once I’ve prepared my filling which uses fresh or frozen spinach spring onion fresh mint and Dill which create the nicest flavor I’m on to cutting my PFF pastry into squares and placing a big dollop of the filling in the center sealing the edges and then brushing with whisked egg to make sure they come out nice and golden save these for the next time you need some dinner inspo you will love them
