but on your apron we’re making eggplant Parmesan cut your eggplant into 1/2 in pieces and salt it thoroughly let sit for 10 minutes while you whisk up an egg get flour and a bowl of Parmesan and breadcrumbs after 10 minutes Pat the eggplant dry with a paper towel and move on to do flour and then egg wash and then breadcrumbs on a sprayed baking sheet line up all your medallions and cook them at 350 for 30 minutes flipping halfway through add marinara to the bottom of your baking dish and line up all of your medallions add a doll of sauce to each of your medallions and then add sliced mozzarella cheese to each of them as well sprinkle fresh basil over the top and then put back in the oven until the cheese is melted and brown I like to serve these on a tray with some fresh basil added and then I serve this with noodles more marinara sauce and of course some Caesar salad on the side enjoy
