Traditional Lebanese spicy fish ( samkeh harra ) with taboule and tahini sauce. ♥️♥️

This is protected family recipe .

This family recipe is dear to my heart , When i was little girl I watched my grandmother prepare this meal but with a much larger fish and she use to share with all the neighbors ♥️ To this day there is no proper traditional Lebanese 🇱🇧samkeh harra recipe anywhere on social media, google or youtube so I’m bringing it and making sure to document it, ♥️ this recipe will also be documented in my coming cookbook ♥️ .
I am blessed to have had the most amazing loving grandmother ( teta ) in the world 🌎 for introducing me some of the most wonderful extraordinary food.

Recipe:

2 large striped bass
3 tablespoons olive oil
Salt to your liking

For the striped bass stuffing:

6 cups chopped cilantro
1 large onion
1 large tomatoe
1 full head minced garlic
1 green bell pepper
1 chili pepper of your choice
3 tablespoons pepper paste
2 tablespoons olive oil
1/3 cup fresh lemon juice
1-2 tablespoons Aleppo pepper
2 tablespoons 7 spice
1 teaspoon white pepper
Salt to your liking.

For the taboule:

5 cups chopped Italian parsley
2 1/2 cups chopped tomatoes
2 1/2 cups chopped green onions or white onions
1/2 cup bulgur ( soak the bulgur in 1 cup of hot water) adjust the bulgur if you’d like , add less or more bulgur
1/2 cup olive oil
1/4 cup fresh lemon juice
1 1/2 teaspoon salt
Lettuce head for scooping the taboule ( optional )

For the tahini sauce :

1 cup tahini
1 cup water
5-6 minced garlic
1/3 cup lemon juice
Salt to your liking
( adjust the seasoning to your liking )

For topping the fish :

1 cup pine nuts
1/3 cup olive oil
Aleppo pepper

For the lime drink :

1 cup freshly squeezed lime
2 cups water
Sugar to your liking
1/2 cup fresh mint leaves
Few lime slices

Directions :

1- first chop all the stuffing ingredients, Cilentro , onions , garlic , tomatoe, add them all in a bowl along with the 7 spice , white pepper , Aleppo pepper , pepper paste , lemon juice , olive oil , salt, mix and set aside.

2- make sure the fish is cleaned properly, drizzle olive oil and sprinkle salt , rub the fish well inside and out.

3- place the fish on a baking tray , stuff the fish with generous amount of stuffing, cover the fish with parchment paper and foil, place in the oven and bake at 350 f. For 45 minutes , after 45 minutes take out the parchment paper and the foil, place the fish back in the oven and bake for another 45 minutes ( this process will help the fish to bake beautifully )

4-while the fish is baking, start preparing the taboule, soak the bulgur in hot water for 10 minutes, start finely chopping the Italian parsley, tomatoes, onions, In a large bowl add all the chopped vegetables, bulgur, olive oil, salt, lemon juice and mix well ( adjust seasoning if you’d like ).

5- mix together, tahini paste , water , minced garlic , lemon juice , salt ( adjust the seasoning ) and set aside .

6- fry or bake the pita bread and set aside.

7- sauté pine nuts with olive oil and set aside .

8- serving the traditional way, grab pita brea, top with fish meat and some of the stuffing , drizzle tahini sauce and sprinkle some toasted pine nuts and Aleppo pepper,
