Greek Orzo Pasta Salad
1¼ cups (8 ounces) dried orzo pasta
¼ cup extra-virgin olive oil
¼ cup red wine vinegar
1 tablespoon fresh lemon juice
1 tablespoon honey
½ teaspoon garlic powder
1 teaspoon salt
½ teaspoon black pepper
1 large red bell pepper, diced
1 cup sliced Kalamata olives
⅓ cup chopped red onion
½ cup chopped fresh Italian parsley
Cucumber slices
Baby tomatoes
Crumbled feta cheese
Pine nuts, toasted
Cook orzo to al dente, according to package directions. Place cooked and drained pasta in a large bowl. Add next 7 ingredients and stir to combine. Add bell pepper, olives, onion and chopped parsley. Toss to combine. Garnish with cucumbers, tomatoes, crumbled feta cheese and toasted pine nuts.
