September may be months away but it’s already Autumn in Australia, and that’s a good enough excuse to make these delicious pumpkin & apple muffins! πŸŽƒπŸŽ

Pumpkin & Apple muffins recipe

πŸŽƒ2 1/2 cups plain flour
πŸŽƒ1 cup white sugar
πŸŽƒ1 cup brown sugar
πŸŽƒ2 tsp cinnamon
πŸŽƒ1/2 tsp ground ginger
πŸŽƒ1/2 tsp nutmeg
πŸŽƒ1/8 tsp clove
πŸŽƒ1 tsp baking soda
πŸŽƒ1/2 tsp salt
πŸŽƒ2 eggs, beaten
πŸŽƒ1 cup pumpkin purΓ©e
πŸŽƒ1/2 cup vegetable oil
πŸŽƒ2 cups peeled & chopped apples

Crumble topping
🍎1/2 tsp cinnamon
🍎1/4 cup plain flour
🍎1/4 cup white or brown sugar
🍎3 tbsp softened butter (not melted)

1. Preheat oven to 175c/ 350f and place muffin cups/ liners in tray. Alternatively, you can grease a cupcake tray and batter can go directly into metal cups.

2. In a large bowl whisky whisk the flour, sugars, spices, baking soda and salt. In a separate bowl, combine eggs, pumpkin and oil. Pour pumpkin mixture into flour mixture and Mixy Mix until just combined. Fold through apple pieces, then scoop into muffin cups until 2/3rds full.

3. For the crumble topping, mix cinnamon, flour, and sugar in a small bowl. Add softened butter, and smush together with a fork until mixture becomes crumbly. Sprinkle over the top of the muffin batter. Bake muffins for 30-35 minutes, or until a toothpick inserted in the middle comes out clean. Remove from over and let cool. Enjoy! πŸ’–
