Recipes: ♡Stir fry Pachoy-tofu-cashew nuts:
Heat coconut oil in medium heat. Stir fry onion, garlic & ginger until aromatic. Add slices of carrots & precooked tofu (slice to 2-3 cm thickness, sprayed lightly with olive oil, cook in airfryer for 15 mins, flip & fry for another 10 minutes, let cool & cut into bite sizes). Cook for 2 minutes. Add 1 dl water, 2 tbsp each hoisin & oyster sauce & a dash of soy sauce. Heat up, add pachoy & cashew nuts, stir, season with pepper & chili flakes. Cook until sauce is in right consistancy. Finish with 1 tbsp of sesame oil.
♡Frittata:
Got left over boiled potatoes? Smash fry them in medium heat ( I used coconut oil) on both side ’til crisps, season with s & p, smoked paprika powder, ( chili flakes). Pour in beaten eggs, cook for 1-2 minutes, transfer to 180°C preheated oven, or flip to cook the other side until set.
