Boil canned a couple pounds of peaches with a whiskey/simple syrup base. Processed for 30 minutes and when I went to pull them out of the canner, the jars tipped over and I could hear bubbles or air coming out of the jars. Sat them on the counter and could easily smell the whiskey. Did I mess up? Are these safe?

  2. Did you make up the recipe or did you follow a tested recipe and process? Some recipes taste great, but don’t lend themselves to canning. Please post the source for this, 30 minutes seems not quite right,

  3. Did you use a rack in your pan? Were the lids finger tight? Sounds like they were too loose if they were leaking after processing.

That first jar is not a pint jar and the recipe you link is for pint jars. So even notwithstanding any other problems with the recipe or the execution, that large jar needs to go into the fridge.
