Hi folks, first time posting here! I love Epoisses, and I just bought a new type, in half size instead of a full wheel this time. Noticed after buying that it’s pale and not as smelly. Now that I’ve left it out the fridge for 4 hours, it’s barely changed consistency, and while it tastes nice still, it’s nowhere near as strong as normal. Is this a ripeness thing, or a producer thing? It’s 3 days away from its best before date. Thanks in advance!
