[Music] hey there welcome back to plowing and Pantry I am doing a beef freezer meal cooking video today but my plans for the video kind of fell apart and so I ended up having to make one of the meals a night early my plan had been to make it for the night of the video and then like just double the recipe and freeze half I do that sometimes but I didn’t get the video ing done so I still made the dinner and so the rest of this video after the voice over will be the other recipes but this one is all on its own and it’s the only one that I cook all the way through before I make before I put it in the freezer the other ones just go raw into the freezer but this is Korean beef it’s pretty much just ground beef and I mix it with soy sauce and sesame oil and ginger salt and pepper brown sugar and when it’s done cooking it’s done and we serve it over rice with green onions so that is what I made this night for din it’s one of those quick 30 minutes or less dinners that’s what I made this particular night and then I just made the whole thing and froze half of it hey there welcome back to plow and Pantry I’m Alicia and today I’m making some freezer meals specifically some beef freezer meals about a week ago I made some chicken ones to finish getting me through the summer and I thought I would add to the variety of our Meals by making some beef ones as well these really do make a difference for me in busy summer days when I’m gardening in the morning and preserving all afternoon and I’m tired and I’ve been in the kitchen I don’t have time it really helps us just have a low-key but delicious dinner um I did intend to film this yesterday but we got very distracted with some other preparations we were making for other family things going on and I didn’t have time to film it but I was planning on doing one of my dishes yesterday also for dinner last night just kind of doubling up so um I went ahead and did that um I made Korean beef yesterday and it was the only meal I had planned on doing all the way like cooking it all the way through and everything and putting it I was going to do half of it for dinner last night and put half of it in a bag and freeze it and have it as a freezer meal all I would have to do is reheat it or put it in the crock pot to reheat it on low for an hour or two and so I ended up having to still make that last night and freeze the other half and I just for that one I just cooked up ground beef this is a dish I’ve made for years I will try to link the recipe below if I can find it and um any other recipes I’m using today but you just ground you just brown ground beef and then you add um soy sauce sesame oil ginger garlic salt and pepper that kind of stuff I like to serve it over jasmine rice mostly when I make something that’s an Asian flavor I use jasmine rice and I really love green onions on top as does a big portion of the family so I made that meal yesterday and got one bag of that in the deep freezer and so today I’m going to continue on with the other items I’m planning on making and I was a wreck yesterday getting all that done so um pay absolutely no attention to the beautiful look I had when I was doing that so I have meat that I just thought out one caveat I should tell you today is that when it comes to things that are going to go in a crock pot which some of these meals will I tend to not pay close attention to the cuts of meat that are required so for example something today I am making is um steak bites crock poot steak bites and I do have I just pulled meat that I had in the deep freezer already I did have some steak tips but I also am just going to cut up a roast for part of it I don’t feel like it makes that much of a difference when it’s all going to cook in the crock pot any ways low and slow it’s still going to be nice and tender and about the same size as the steak bites so um I’m using both steak tips and a roast that I’m cutting up for that recipe today I’m going to go ahead and get started on that one that is probably actually the most one of the most involved ones for today let me get my bags out and a marker Sharpie okay so I’m going to do two I’m doing four recipes total by the way cooking the uh Korean beef that way like just doubling the recipe in freezing half that’s usually how I make my freezer meals I don’t often do a whole big batch get a bunch of stuff in the freezer day often I will just if I’m making a dinner that freezes well I will just double it and cook half and put the other half in the freezer for another time it’s only one extra meal at a time but it’s also being done when I’m already making dinner and it doesn’t take really extra time to do that so that’s um that’s actually pretty normal for me so I’m going to do two each of all my other meals as far as like two nights worth of dinners so Croc steak bites two of those and these are going to go in the crock poot on low for four to six hours and crockpots can be very different not only from brand or single ones to single ones but they can also be different depending on how old yours is because my I have two crockpots and my original one that still works just not as well um from back in the day when I got married was before the USDA or whoever was in charge changed the minimum requirement for the heat in the crock pots and that one takes a lot longer to cook um I actually prefer that because I never had to worry about anything burning but in the current ones I I do so I’m making the crock poot steak bites today I’m also going to make Hawaiian barbecue meatballs that is an easy easy one and I’m going to make some Asian burgers and today for this one I actually there are other parts to it that I won’t make until the day we eat them this one takes a little more planning and that’s okay it’s a if we’re going to grill one night usually my husband does that part and so I have like a a hoisen ketchup and a Asian sawo that go on these and I can just get those done in the kitchen while he’s grilling the burgers out there and it’s all good all right let’s get started on these steak bites so some of this is beef regular beef um that I got the grocery store and some of it is stuff I got from butcher box so these little packages are from butcher box so they are nice grass-fed be the other ones were ones I just got on sale I do eat a mix in my house I would love to have just the butcher box pastured beef and all that but um my budget doesn’t really go for that as far as like every meal all year and we like these I’m going to we’ve had them over rice and mash potatoes we like them both ways so whichever you like and yes I just use my hands and wash them a lot in between I wash my hands a lot anyways I have issues with the way things feel on my hands so whenever I do cooking videos with you guys I’m always cutting out Parts where I stopped and washed my hands because it would be a lot of times okay I’m actually going to get out my butchering knife for [Music] this this knife just does a really good job of cutting in between the fat and the meat and I do want to cut that off some people like to keep it I don’t mind some of it my husband really can’t stand it though so I do cut it off when it’s thick large chunks I cut it off if it’s marbling in between I don’t worry about it when it is from these pastured cuts of meat though I don’t waste it it goes either into broth or gets cooked it used to get cooked for my dog when we had one um chunks of beef that are attached can go to my chickens or like there’s a lot of things you can do with the the meat that you cut off let’s see I’m going to start putting this in the other bag and just see we can get it up I know that the summer I think that we’re going to I think I’m going to end up eating this stuff this summer while a big chunk of it while my son is home which is only 3 weeks that we get with him this Summer but um you know duty calls we’re lucky to get that because he’s going to start having activities he’s at the Air Force Academy he’s going to start having activities that take more of his summer and so this might be the last summer I even get three weeks but I know that he will eat a lot and I want to make sure that I have enough in each of these bags and the amount of sauce doesn’t really need to change if you add a little extra meat it stays pretty it’s Saucy enough that it can cover a lot more meat especially as it Cooks in the crock pot because that keeps all of the liquids in there together if you buy steak tips though you can give yourself a little easy Break by just dumping them into the bags um you could probably do the same thing with beef stew meat it’ probably just fine again it’s a crock pot it Cooks low and slow for a long time you can get a lot done in there a lot of different kinds of meats all right now that I have that all cut and everything cleaned up and the counter sanitized so I did get some juice on here we’re going to get on to the sauce for this and it’s actually pretty easy so I’m going to get the things I need for the sauce and aou onion soup mix beef broth and butter okay I have this stuff up here so I am starting with aou mix one packet per bag um I don’t this is one of the few seasonings I don’t make on my own I just bought this at the store when it was on sale and I don’t make it because I don’t really use aou Gravy for anything else so it’s just not something I feel worthwhile making my own mix for when I we eat this like three or four times a year and and you know if you have a great recipe that uses a mix let me know if I try it and like it then maybe I’ll have more reasons to make my own aou mix I do make my own onion soup mix though a packet so you need a packet of aou per bag and a packet of onion soup mix um I do have a video where I made this along with a bunch of other mixes that I regularly use and this is the equivalent of a packet is a/4 cup so I have the onion soup mix we also have one 1/4 cup of butter which is 4 tablespoons which is half a stick I will cut it into pieces and get it in the bag it doesn’t have to be small they’re going to cook and melt down just makes it a little bit more evenly distributed during the cooking process and then the only other thing I need to add in here is the beef broth and I just didn’t feel like going downstairs in my basement to grab beef broth so I just mixed up some um like beef bullion today and put it in here I need one cup per bag so this is two cups think I still have some powder hanging out down there one cup there one cup here and that is done okay so this recipe is done and ready it grows in the crock pot you can do low four to six hours or High 3 to four hours I usually go on low unless I forgot to put it in the crock poot myself um next recipe let’s get this out of the way I am going to you know what I’m going to make the barbecue meatballs because those are easy and fast let’s see and I am going to use frozen meatballs I have made my own before I like it but for today’s I was like you know I am just I’m going to go all easy I really like go let me grab them and I will show you which ones I really like okay my favorite meatballs are actually these little they’re called party size ones I get them at Trader Joe’s and I like trer Joe stuff tends to have a little bit less of the junk in it um but I didn’t have enough to do two bags because I haven’t been to Trader Joe’s recently it is more than an hour away from me so I usually it’s one of the things I stock up on one in there so I have one left in my deep freezer and I’m not even going to bother fly these because they’re going back in the freezer I actually like them also because of their size um they’re called like party minis but I don’t think this is a mini I think this is a bite size at least for me then my other so then I bought two the regular grocery store and I’m going to put one in here these are just flame broiled home style meatballs and I’m going to split the second one half and half just because again my son will be home for part at least one of these and my daughter one of my youngest daughter really likes the leftovers of this anyways and this is really one of the easiest things to make okay the only other thing I have to add to this is barbecue sauce and crushed pineapple I’m putting a bottle in each these are just ones I got at the store on sale um I do make my own barbecue sauce a lot but have not today don’t have it and today I just want to get these in the freezer so that I can have some meals ready to go do the whole bottle in each one an eye so that I don’t have to sit there and Shake forever I put a little bit of water it really doesn’t doesn’t take much lid back on to shake it up and that’s good enough for me again a lot of the year I will make my own barbecue sauce but the point of these meals for me is to get them done fast in the freezer and then get them out of the freezer and onto the table fast without me having to spend a whole lot of time working on it the only one of these I’ll have to do anything to besides um dump it in the crock pot or saw it is the the burgers I haven’t bought this store brand one before it has a different squeezy top on it which might be great for um when you’re using it yourself to uh dress Burgers but when you’re jumping the whole bottle it’s kind of irritating so one bottle of barbecue sauce and one can of crushed pineapple these are just regular size cans hello I get them at Aldi for me it’s the cheapest place I can find them I have not found canned pineapple cheaper anywhere else even my grocery store when it’s on sale or Walmart on sale is not as cheap for me as Aldi just dump the whole thing in there I’m not draining it I’m using the Crush you could use the tidbits or the chunks if you wanted um maybe you like the chunks of pineapple my family doesn’t all like the chunks of pineapple they don’t mind the flavor but don’t all like the chunks but I actually use the crush because I like it to kind of just get in there and mix with the barbecue sauce really well okay and that is all for these these are just going to go in the crock pot un low four to six hours again depending on your crockpot okay the next one might make you laugh give me a second I need a bowl so I’m making my Asian burgers with this and um sometimes let me get my ground beef here sometimes my store has grass-fed ground beef grass finish 100% all the stuff on sale in Preen Burgers cheaper than it cost to buy the bulk even on sale so I will do every now and I bought a package of these a couple packages of these um for this for another recipe and for burgers so we had these already one night of burgers where we just took these and seasoned them and ate them but for the I will buy them and keep them to use for ground beef which is the case here like I’m going to make burgers but I’m going to have to mix stuff into the meat and for my next recipe I am making um Sloppy Joe’s and so I will just do the whole ground thing but the only ingredient in here is grass-fed beef there’s no other additives or anything so there is no need to pay more for a chub of ground beef when this is ground beef that’s what it is it’s just pre-made into patties you don’t have to use it that way something else I do for freezer burger patties is I like to use these what are they called like wax paper sheets in between stuff so I will have these out I’m going to cut them in half actually all right so to these Burgers I am going to add an two eggs because it’s one [Music] each okay so two eggs um I need because I’m doing two recipes I’m doing panko panko breadcrumbs you can use a gluten-free option if you want I need a cup though cuz it’s half cut per recipe and I eyeball it it’s about a quarter half 3/4 one you’re seasoning Burgers it does not have to be an exact science the bread is a binder but close is good enough in this case you can also use other bread crumbs it doesn’t have to be panko I just like the texture of them in this kind of holds up well all right some chopped Red Onion okay how much onion do I need half a cup so a cup probably about this whole thing it’s right about a cup I’m going to do a an Asian sweet chili sauce I Veer a little bit I will link the recipe I do Veer slightly from it um couple of tablespoons of this and then a little garlic you’re supposed to use Asian chili garlic sauce which we don’t have in my area so I add that plus a little bit of garlic and I’m just going to use garlic powder today just a wee bit some soy sauce and hoist in okay a couple of tablespoons of soy sauce and a cup couple of tablespoons of hoiston sauce there’s a couple things I use hoiston for and I really like it it’s kind of a sweeter Asian Sauce some lime juice because I have that already on hand today like I said these get served with like on they’re good on a Toasted Bun with um an Asian hoist and ketchup more of this with ketchup and the SLO that goes with it a garlic Mayo aoli um and we’re almost done some brown sugar Ginger pepper now I am actually just going to go through with my hands and get this all mixed up um you’re welcome to use gloves if you prefer that I’m just serving my own family my hands are clean I don’t care I think when you cook long enough in the kitchen the feel of things doesn’t bother you including hot things my husband jokes that I have no heat temperature left in my hands just want this nice and mixed up I should have laid out my wax paper things beforehand because I’m have to wash my hands lay them out and then make patties and washm again these are really good flain broiled on the grill delicious lots of flavor in these and with the SLO and the condiments it just all comes together really really good I also like Asian cucumbers served with these I have a video for those too okay so let’s get these laid out and ready I find wax paper sheets to be very convenient between Frozen and patties it just helps up keep them separate in the freezer when you undo them my husband actually prefers to grill patties made like straight from Frozen not thought at all so some nice big I believe I have these are going to be quarter pound each if I divide them correctly [Music] got my dishes piling up over here but I’ve got dishes going in the dishwasher so I’m just sitting these full of water and soap so they’re easy to deal with it’s not necessary if you have the wax paper or whatever between each thing to have on top and bottom because it’s kind of a double layer that way once you stack them but I just like them that way these are easy to find too um I used to get them in a store called Smart and Final um we don’t have those near where I am now but I some Costco you can get them not my current one but some of them do have them I’m sure you can get them online I can find some and Link them below for you they’re just um they’re any restaurant any place that has restaurant supplies will have them I just find them convenient and one box will last it lasts me for years so it’s they’re not that expensive it makes my life a little easier especially when I’m doing several time and not have to sit there and cut wax paper and then it just lasts for years oh my Burgers here they go and I put five in a pack that is enough for my family you do you however many you want to make and get out for your family as much air out as I can because these are any moist meat is prone to frost crystals in the deep freezer these are actually when I feel them they’re not wax paper per se I don’t feel a waxy coating on them I’ll try to get the correct name of what they are for you and put it on the screen so Asian burgers are ready the Korean beef that I made the other day is already in the freezer Hawaiian barbecue meatballs are ready to go back in those meatballs are still frozen really makes the keeps well as far as leftovers for so a good lunch to take to work the next day or something like that we have our pepper steak bites we just put a pepper’s not a huge ingredient here but we put a lot of it on when we make it we like a lot of black just ground black pepper on them okay the next thing I’m going to do is actually something that if I had planned on it I would have started it first because it has cooking Parts this is going to be another one like the curry and beef where I’m going to cook the whole thing and put it in a bag so all I have to do is reheat it this is sloppy Joe mix the recipe is from my cookbook my proof version from way back when I will link it below it goes in the crock pot but I’m going to get it ready here okay I’m going to do the same thing I’m going to use the burgers that’s two and a half pounds of meat right there so that’s a lot I’m also going to use so last summer I fro and every summer I do this I chop onions and bell peppers and freeze it together so that I can use it in a lot of things like omelets and soup bases and stuff like that so I’m going to cook up a couple of cups of this this let’s see yeah yeah that’s about enough for two and these in my cookbook the idea is to add a lot of vegetables to your meals not trying to hide it or anything but just um every recipe in the cookbook has vegetables in it whether it is a main dish a dessert a beverage a breakfast a vegetable dish it’s not a vegetarian cookbook there are dishes of meat in it um for when it first came out there were some and add salt and pepper it was it spent a day in the top I don’t remember like the top 20 of the vegetarian cookbook and I was like oh no people are going to buy this it says specifically on it for the non-vegetarian okay this is just putting vegetables in your meals and just having just upping the vegetable amount in your meals okay well that’s Browning I’m also going to get some celery in here it looks like I need need a third of a cup so 2/3 of a cup because this is a double recipe my celery here is on its Last Leg Get It rinsed up and I like it chopped nice and fine in this and really we’re just cooking the vegetables here until they start to get a little bit soft we don’t want raw vegetables in our Sloppy Joe’s and they tend to when you cook them in the crock pot they will tend to just not necessarily keep the crispness but keep the flavor of the raw vegetable and I want more of a cooked vegetable flavor in this and while that is getting ready I’m going to start getting the sauce ready make sure this is accessible here um by the way the recipe in my cookbook calls for ground turkey I originally made him as turkey Sloppy Joe’s but since I had good quality gr grass-fed ground beef on sale this week I decided to make ground beef Sloppy Joe’s which is the normal way to make them anyways I just going to get I’m going to use a large measuring cup to get my sauce going so an 8 oz can of tomato sauce so I need two of those and I’m just going to split this in half into two different freezer bags and we’ll have two different nights meals out of it okay I need half a cup of ketchup each so there’s a full Cup this is an 8 O jar of ketchup okay that is about a little past half done I’ll start adding the beef to it because it will continue to cook while the beef is in there I’m just going to crumble these patties into the mixture here I am just going to stir this around and get it to the point that it is browned up I could do the same thing I did last night and instead of freezing both of these I could have half of it tonight we could have Sloppy Joe’s and we could have the other half in the freezer for another night but we have other plans tonight so I’m just going to stick both of these in the freezer while I’m waiting for this to Brown I will continue working on my sauce here I’ve got my tomato sauce in here I need let’s see the ketchup up I need some Honey 2 tablespoons of Honey again I eyeball these things I do not measure out honey okay a tablespoon of masses so I need two tablespoons of that need to clean my rim all right a couple of tablespoons of mustard this is regular yellow prepared mustard if you have ever made your own made home your own homemade yellow mustard which I have um I think I have a video on it I can link for you and if it came out bitter because you didn’t wait to add the vinegar and stuff um or add the you didn’t wait to do the second part of it you can add it to something like this that has a sweetener with it too so it will be like use it in a sauce if it’s too bitter to use by itself okay and then I need some salt and pepper I’m actually I put some of that on here but I’m going to do a little bit more I’m just waiting for this this to get all the way Brown before I add the sauce the sauce works better flavor-wise um with the with the ground beef once it’s all the way Brown in addition to that it’s also easier to tell when it’s all the way cooked because the sauce isn’t changing the color of the raw meat for you I’m going to use this time to get a little bit cleaned up okay once it gets to the point where all the ground beef is cooked I will let it go a little bit longer and let some of the natural juices evaporate make it a little less soupy and that is when I come in and I add my sauce now if I were to eat some of this tonight like just use some of this and only freeze half of it I would cook it until the sauce is thickened and also about half gone it is better if it marinates and kind of it’s kind of like spaghetti sauce in that if if it Cooks longer the flavors meld better and kind of caramelize and it gets thicker so I would do that and get it just really just to sloppy joe consistency the way you like it since this is going into the crock pot though I am going to I like to cook this down until about half of the liquid is gone again just like the natural juices I like I feel like that gives it kind of like spaghetti sauce a chance to thicken and mingle and just kind of develops a different richer flavor Al together and then when I put stuff in the crock pot it will always have a little more liquid still and so sometimes I will take the lid off in the last 30 minutes and let it still cook and let some of that evaporate really as long as it has that thick sloppy joe consistency you’re probably fine thank you guys so much for joining me today we got 10 meals done if you include the Korean beef I did yesterday that’s already in the freezer and we got let’s see five different recipes I going to get this stuff into the freezer I’m going to let my Sloppy Joe’s cool down a little bit before I put them in the bags in the freezer and then the rest of it though can go ahead and get in there now so I hope to see you guys in the next video thanks for   1. I agree about the older crock pots being better especially when you want to go low and slow while at work. You just can't get the newer models to do that without decimating the meal

  2. I like the UNcluttered look of your kitchen. Isn't it so much easier to keep clean? And reflects on your own organized brain. 😉
