My Sunday dinner was a 400gr entrecôte (rib eye for my us friends). My sides were potatoes baked at 200°C for 30 minutes and sautéed mix of mushrooms, onions and bell peppers.
The steak was seasoned with salt and pepper. Then left in the sous-vidè at 58°C (134°F) for 5 hours. Afterwards it was given a quick sear and cut open to witness the perfection.

    I like it for thicker cuts like yours! It’s the best. Especially for filets. Throw it in, go about your day, do a hot sear when you are ready to eat. Good to go!

    I love my sous vide. I get home from work late and don’t feel like cooking in the middle of the night so I have my freezer full of steaks and pork chops that I pre seasoned and vacuum sealed so I just grab something and drop it in to cook while I watch tv and then quickly sear it and eat like a king with no effort

    Couple questions …

    How do you determine the length of time, 5 hours in this case?

    Also, how long is a “quick sear”?

    I have not cooked anything sous vide, and I don’t want to blow it coming out of the gate.
