I have been perfecting my dough and sauce recipe this last month. The one thing holding me back is my cheese. I’ve read on here about galboni, but my grocery store doesn’t have a block of it and it isn’t low moisture and whole milk. The closest I can find is pre shredded whole milk low moisture cheese and it just isn’t great to be honest.

What cheese brand should I be looking for? Where should I be looking for it. I have access to ACME, Food Lion, Costco, Trader Joe’s, and ShopRite.

    Get whole milk string cheese. Or any mozzarella that isn’t pre shredded. The cellulose on shredded cheese makes for terrible melt.

    Always get whole milk mozzarella. I like to use fresh mozzarella chopped into small squares. Gives cheese time to melt without it breaking from the oven temp.

    Pre-shredded is junk from the grocery stores.

    Trader Joe’s has 16oz blocks of whole milk low moisture and part skim low moisture mozzarella blocks. I think they are $5-6 each.

    I buy whole milk mozz at a restaurant supply store. I think you can also get a chunk from your local store deli and then shred that.

    I like Bel Gioioso for mozzarella personally. Buy a ball and slice it up yourself into whatever size you want. Easy to find at most grocery stores. Some Costco’s carry it and it will be cheaper but the ones near me have switched it out for Costco brand (which honestly is still decent, though they have some quality control issues imo).

    If you’re looking for different varieties of cheese, I like to switch it up with provolone, fontina or gorgonzola depending on the rest of the toppings

    As a general rule, I don’t recommend pre-shredded cheese. It’s often coated with some kind of starch so it doesn’t clump up and that also makes it melt poorly.

    You may be able to get bella rosano from the costco business center, which may even deliver it (I’ve never tried getting business delivery from costco). It’s a good cheese to apply in, shall we say, NY slice shop quantities.

    As others said, bulk packs of string cheese work for some people, seems expensive if you can get to a restaurant supply.

    GFS, Restaurant Depot, and Chef’store usually allow members of the public to come and buy stuff with the understanding that there are NO returns. Some store managers are again’it because they don’t want the hassle of collecting and remitting sales tax. So check your restaurant supplies. Chef’store is where i get my Galbani.

    Frigo WMLM is very similar to Saputo Gold probably because Frigo is a Saputo brand.

    Tilamook has a low moisture whole milk mozz that’s decent but idk if it’s at the stores you mentioned

    Trader Joe’s WMLM is the best retail deal/cheese to be had they also have great options for pecorino or parm depending on your mood.

    Low moisture whole milk mozzarella, provolone, and cheddar, 2/1/1 blend

  11. My favourite is buffala mozzarella or fior di latte mozzarella. They are more fatty and add great flavour

    If you have a Sam’s Club, they sell 5 pound bags of whole milk mozzarella. I think it was 14 last time I ordered

    I like to buy bricks of mozzarella and cube them. I’ll add in some Jack cheese cubes for some extra flavor. I’ll usually go 80/20 mozz/jack. I don’t use shredded because it doesn’t melt as well. Brand hasn’t seemed to matter much, but I’m also not picky.

    Costco sells blocks of low moisture cheese. You should see what they have in blocks and shredded form.

    I’ve become known in my Publix as the “pizza guy” because I’ll have them cut a 1.5-2lb block of Boar’s Head whole milk mozzarella for me, rather than slicing.

    We will grate it an hour or two before cook time and put in the freezer so it takes a little longer to cook once in the oven

    Try different stuff, but write down how it went. There is so many different type of cheeses that works great on pizza so don’t limit yourself to mozzarella

  19. Pretty much all of those stores listed will have blocks of low moisture mozzarella, don’t buy pre-shredded. Trader Joe’s also has fresh mozzarella and I’m sure probably some of those other places do too if you prefer
