    My man, this looks SO juicy.

    I have been using cast iron whenever I pan sear because so many people recommended it. I had a MUCH better sear with stainless. I cooked two steaks simultaneously and used an IR thermometer to measure the surface temp. Even though the stainless was not as hot as the cast iron, it seared much better and more evenly.
