Here she goes … sardinian guanciale (because that’s what I had and was a gift), 75% pecorino, 25% parmigiano, spaghettone, acqua di cottura. Added crunchy guanciale as topping. I liked it

    forgot to say there are eggs here.
    3 egg yolks for 200 grams of pasta + about 1/3 a glass of cooking water to make it more fluid added to the eggs.
    plus more cooking water to jump the pasta in the pan (which was under cooked a few minutes).
