I'm living in Denmark and have a great cherry tree in front of the house I'm living at. I've already done some lacto fermentation and made cherry bump, so with the remainder of the harvest I was just going to preserve them in light simple syrup. The question I have is whether I should do a hot pack or cold pack for them. Of note is that I have yet to see the traditional ring and lid top for jars out here, so I'm stuck using regular jar lids like are pictured here. Any advice on how to best preseve the cherries? Thanks in advance!
