After spending a week away, I came home to more tomatoes and squash than I know what to do with. Any suggestions or favorite recipes would be appreciated

For the giant zucchini: might I suggest a julienne pork stir fry that my mom does when she has zucchini the length of a forearm?
Shave some strips off the zucchini, vertically, then cut in half lengthwise and scoop any seeds out. Cut in half lengthwise again then at an extreme bias. Salt gently and set aside.
In the meanwhile slice some a bit of ginger, some garlic, and scallions. Thinly slice some pork butt and marinade the meat with salt, sugar, white pepper, a bit of stock and cornstarch (velveting the meat.)
While the meat is marinading at room temp, drain the zucchini and heat up your wok. Stir fry the garlic and ginger, add the meat until 70% cooked, add in the zuch, then season the overall stir fry with some oyster sauce, sugar, soy, and a bit of sesame oil. Top with the scallions and have with a hot bowl of rice.
