    Zucchini Bread is delicious!

    If the seeds are large and woody you can scoop them and dry roast them in your oven.

    They’re scrumptious!

    Dry a handful of seeds for next year’s garden.

    Grate it.
    Chuck it in the slow cooker with some kind of fat (oil or butter).
    Cook it down until it turns brown.
    Spread on toast.

    Heck with zucchini boats make zucchini arks.

    Slice in half scoop out the seeds and punky stuff. Fill with browned ground beef/venison and cheese. Awesome meal.

    With zucchini this big I make roasted zucchini pizza bites. Bake the zucchini to start, throw some sauce, cheese, and mini pepperonis on there, broil it for a few minutes and voila! Low carb pizza bites you can eat a billion of.

    I slice off the outer 1 inch in slabs and marinate overnight in balsamic vinegar, garlic, smoked paprika and olive oil, with salt and pepper and maybe a tiny pinch of sugar. I grill the slabs until they have grill marks and are softish.

    They make great toys for the swimming pool. When my daughter was little, I would let one grow just for that purpose.

    If you have too much for bread, add the rest of the grated zucchini to spaghetti sauce.

    Split it, scoop it, roast with salt and pepper, fill with browned ground beef, the vegetable trio, and tomato paste mixture, top with a sharp cheese, bake, and enjoy.

  18. We had one like that and I grated it up, squeezed the water out and froze it for zoodles. It was fine.

    We had a few that large in September. We saved them and turned them into jack o lanterns for Halloween.

    August 8th is national Leave A Zucchini On Your Neighbors Porch Day. Maybe you could go early?

  21. The taste will be worse than store bought I’m afraid. I would scoop out the seeds to save for next year and toss the rest in the compost.
