Got back from a cruise and realized I had allowed myself way too many sweets and junky things, so I’ve come back to Mediterranean diet.

  1. Barley and split peas cooked in chicken broth and added white beans, salad with radish, microgreens, arugula, carrot, cucumber, Parmesan, and Italian dressing and leftover Dutch oven roasted pork loin pan seared with habanero mango sauce.Pork loin recipe here

  2. Orzo with pan seared shrimp with a salad of arugula, feta, tomato, onion, cucumber with olive oil and salt/pep

  3. My lunch of tuna salad with light mayo, microgreens, pickles, and green onion which I scooped withveggie chips and served with a grape, strawberry, orange fruit salad

  4. Lavash bread pizza with homemade tomato sauce, banana peppers, leftover carnitas meat, mozzarella, onion, and arugula. This is my fav carnitas recipe which sometimes I’ll sub the beer for red wine or just not at all
