We canned some crabapple jelly in 2020 using a water bath method. It has been stored in the crawlspace since then, which has been dark and between 55 and 65°. I don’t see any changing color, texture, or smell. But I’m not sure if it is safe to eat or not. What do you guys think? I tried some and it tasted fine.

    If you used a tested recipe and had a good seal, it’s safe.

    That headspace is very concerning. Jelly should only be 1/4 inch from the *rim,* not from the bottom of the band (this would be nearly an inch in that image).
