Beets are everywhere at my farmers market, my BF made rye bread today, arugula is growing like crazy in the garden and I felt like having octopus. That diner was really simple and it made me happy!

Beet tartare recipe of the day :

  • 1,5 cups cooked beet (the smallest ones are the best), chopped in small pieces
  • 2 tbsp chopped pickle
  • 1/3 cup Greek yogurt
  • 1 tbsp Dijon mustard
  • 2 tbsp white balsamic vinegar
  • 1/2 cup (loose) fresh basil, chopped
  • 2 tbsp chopped chive
