today I’m sharing a recipe for an easy roast chicken with potatoes garlic and lemon it’s gonna be delicious hi sweet friends my name is Mary and welcome to Mary’s Nest this channel is all about living the simple life cooking from scratch making home remedies and creating a cozy home with charming thrift store finds so if you’re like me and you like the simple life be sure to subscribe to my channel and don’t forget to click on the little notification bell that’ll let you know every time I upload a new video I love roasting chickens I find it so easy and if I could I’d roast one every day of my family would tolerate that but in any event today’s recipe is very simple and all you’re gonna need is about well first of all a chicken AHA and about a pound and a half of small potatoes and two heads of garlic that I’ve just cut in half one red onion which I’ve cut into eighths two lemons halved and a stick of butter and you’re also gonna want to make a little herb mix any herbs you want any herbs you like or fine I’ve got in here thyme some lavender some rosemary some fennel seeds you know just a mixture of whatever you like and you’re going to want two tablespoons of that and to that you’re going to want to add one tablespoon of salt I’m using a fine ground sea salt you’re gonna want to also add a half a teaspoon of black pepper and a quarter teaspoon of red pepper flakes certainly you can leave that last one out if you want but my husband always likes a little spice so I like to throw that in and then the only other thing you’ll need is a little bit of olive oil that we’re going to toss the potatoes in now the first thing you’re going to want to do is pre-heat your oven to 500 degrees Fahrenheit and we’re gonna get the oven nice and hot and once we put the chicken in we’ll leave it at 500 for a few minutes and then we’re going to turn it down to 350 degrees Fahrenheit now the first thing you’re going to want to do is get some type of pan to roast your chicken in this is a 12-inch cast-iron pan and I like to use cast iron because this is going to help the potatoes get nice and crispy but certainly you can use any kind of roasting pan that you have now the first thing I’m gonna do is take these little potatoes and just cut them in half because they’re basically gonna serve as a rack that we’re gonna put the chicken on top of and they’re gonna cook up real nice in the pan and brown up that’s all you want to do is just like that now the next thing you want to do once you get your potatoes all cut up it’s just drizzle about two tablespoons or so of olive oil on them then just about a teaspoon of the salt and herb mixture just sprinkled on top and then we’re just gonna with clean hands toss everything on well the potatoes are all mixed up now and we’re just going to drop them right down into the pan and then what I like to do is just turn the cut side down that’ll help it get nice and crispy next I’m just gonna place the onion wedges all around then I’m gonna take the heads of garlic that I’ve cut in half and just tuck them in two and then I’m gonna tuck in my lemon wedges then I’m just gonna take a little bit of more olive oil and drizzle it over the lemons the garlic and the onions then I’m gonna take just a few pinches of the urban salt mixture and sprinkle it all over these three things the lemon the garlic and the onions now what I’ve done is take a half a stick of butter added a tablespoon of the herb mixture and the butter softened I’m gonna mix this up and make a little compound butter then we’re gonna loosen the chicken skin and slide it on under well I’ve got the butter in the herb mixture all mixed together and now I’m gonna very gently work my hands under the chicken to just loosen the skin ever so gently you want to be careful not to rip the skin and you just want to get in there and loosen it best you can get around where the legs are on either side just going very gently it should loosen for you quite easily and then just turn your chicken around and loosen the skin on the other side as well and then we’re gonna take the herb butter little by little and just work it under the skin and you can use your hands underneath and then the top of the skin basically just doing like smoothing it out and helping you blend it all in so that all of this the meat the chicken meat the chicken breast meat and the leg meat become covered with the butter and you have the skin holding it all in this is going to impart wonderful flavor well I’ve got that herb butter all under the loosened skin and you’ll see it just picks up very easily I don’t think you’ll have any trouble loosening the skin on your chicken and then we’re just gonna pick this chicken right up and we’re gonna put it into the roasting pan the next thing I’m gonna do is take the remaining butter add in the herbs and just melt this very gently on the stove so that we can brush it all over the chicken and while I do that I’ll get ready to tie up the legs now I’m just going to get this twine and we’ll tie those legs up and I know some of you have asked me where did I get my kitchen twine and kitchen twine holder and I actually bought this at a little kitchen store that used to be here in our town but I’ve seen them all over Amazon too so I’ll definitely put a link down below in the description if you’re looking for one okay perfect just tied those legs up with a little Bowl and now we’ll brush them with to impress the chicken with the melted butter well I’ve got this luscious butter and herb mixture all melted up and I’m just gonna brush this all over the chicken we’ll just look at this gloriousness I can’t wait to pop it in the oven so as I said we’re gonna put it in a 500 degree oven for about 20 minutes now everybody’s oven is different so check your chicken at 10 minutes if it’s already beautifully browned you can turn it down to 350 at that point if not let it go 15 or 20 minutes and then turn it down to 350 but we’d like to try and keep it at 500 for 20 minutes and then once we turn it down to 350 we’re gonna cook it for maybe another 40 45 minutes you know it depends on the size of your chicken till the internal temperature register is 165 degrees Fahrenheit now that said some people like to make their chicken cook until 185 degrees Fahrenheit and that’s fine too in my video where I show how to make a simple roast chicken I recommend cooking it till 185 degrees Fahrenheit but the powers that be in the US Department of Agriculture or whoever it is that sets these guidelines says that it is okay to roast your chicken to 165 degrees Fahrenheit so I’ll leave that up to you look at this beauty now all you can do even bring it right to the table like this slice it up serve it with some of
