You want the thin p part of the triangle up. That way the moisture can drain away. It also stays hotter. If you keep the flat side up and get it really hot, the initial sear will be okay.

At least on the Masterbuilt Gravity smokers, the grill has a label (bottom right corner) on each side, one side says SMOKE and the other says SEAR.

I miss the stainless round bars for all purpose grilling. The Webber grate marks look comically wide or too thin and too far apart.
I looked at the Webber website for replacement grill grates hoping to find the stainless rounds one costs and was shocked to see a lot of people say their original grates corroded fairly quickly. The only thing I can think of is with the flat side up that allows for more surface area like a flat top….but in my mind either way the flame is blocked and is getting the bars hot.

When I was young I was all about the sear marks working in kitchens with my dad as a little boy I thought they were impressive. Prob into my teens and early 20’s. As I’ve gotten older. I’d much rather have a really complete crust any day of the week. 🤷🏻♂️
