I have been wanting to switch to a Mediterranean diet for a while now. Today marks my first week committing to it. This dinner consists of baked salmon, quinoa salad topped with fresh basil, and cardamom rainbow carrots with raisins.

    Here is my recipe for the carrots:

    1 lb carrots, thinly sliced,
    5 tbsp raisins,
    Sea salt to taste,
    Fresh ground pepper to taste,
    1 tbsp minced fresh ginger,
    2 tbsp chopped fresh parsley,
    2.5 tsp lemon juice,
    1/2 tsp lemon zest,
    3/4 tsp cardamom,
    1-2 tbsp ghee as needed

    Set oven to 400 degrees F. Prepare the carrots and add all other ingredients in a mixing bowl except the raisins. Roast for about 15 min on a baking sheet. Add in the raisins and roast for another 5 min. Serve warm.
