Making sweet relish. Does the ratio of onion cucumbers and peppers actually matter? They are all low acid and need vinegar to preserve.

I haven’t made sweet relish, so I’m speaking from a salsa making perspective. You would want to keep your volume the same. In salsa, you can swap out different varieties of peppers, onions and tomatoes. If it calls for 3 cups of bell peppers, but you want jalapeños, it still needs to be 3 cups. I honestly don’t know if you can mess with the ratio in relish.
