Been vegan since January and one of the first things I wanted to do was make a tofu scramble. I lift weights and need around 150g of protein, so I’m always on the lookout for good post-workout meals.

I used to drink a lot of protein shakes, but the last few weeks I’ve really been trying the transition to whole food meals instead of all day snacking on processed foods.

The recipe is from Derek Simnett’s tofu scramble:

  • 250g tofu (crumbled)
  • 1/4 tsp chili
  • 1/2 tsp cumin
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1 tbsp nutritional yeast
  • pinch of black salt
  • 140g bok choy
  • 100g white mushrooms
  • 100g red bell pepper
