I’ve tried making cuts at the belly, and frying on a skewer. Any tips appreciated!

    You gotta make several slices across the underbelly after you shelled it. Then push it down from the back firmly till you feel a slight crunch. That keeps it straight when you fry them.

    There are tendons that make them curl up when cooked and you need to break them to keep them straight. Make some cuts along the belly, put it belly down and using your fingers push until you feel it sort of snap without causing the whole thing to break into bits. Difficult to explain sorry.

    After making slits to the belly, you need to apply some light pressure over the slits to sever the inner veins. You will hear them crack, as you do it.     Stick a skewer up the middle and leave it in when you deep fry. Pull it out before serving.

    Aside from the belly cuts as commented, dont forget to devein the spine to get it to swell

    You have to crack (?) the muscles straight after you make little cuts on the underside. Mine stay nice and straight after that.

    Making small slits i assume, that way you can bend the shrimp or make it straight

    My boss would beat them flat with a skillet then flour, drench, and fry them. Not the most technical of ways, but her spices, batter, and prawns were all wonderful quality, so it always came out delicious.
