Had a really amazing time enjoying the 8 course tasting menu for lunch at Zilte. All of the dishes were very complex and had a lot of different components but tasted great, and it’s easy to tell they took their time in mastering each dish before putting it on the menu.
Personal favorites even though every dish was very good:
Caviar course (pics 6 & 7). It came with not 1, not 2 but 3 different preparations of caviar, all with white asparagus. Each one tasted completely different and it just felt like they were showing off by making 3 dishes that use the same fundamental ingredients taste so different. I would put the 3rd picture but l'm only allowed 20 pictures sadly.
Quail, kemiri nut, cime de rapa, hinohikari (pics 10 & 11) just extremely tasty. Lots of components and they all balanced very nicely.
Kagoshima Wagyu (pic 13) with abalone, cabbage, and black garlic. Possibly the best wagyu dish I've ever had.
Caramelia, orange, blue vanilla (pics 15-16), amazing finish to the meal. Had the flavors of a creamsicle with some chocolate here and there. Very comforting flavors and just what I wanted after sitting through a 3 hour lunch.
Overall I'd highly recommend if you're in Antwerp looking for a fine dining destination. I included the menu at the end in case anyone was interested in the rest of the dishes or if you have any questions I’ll try my best to answer them.
