Currently moved to a new country and I've had a challenging couple of weeks. Had a particularly tough couple of shifts so bought myself a big piece of meat to cheer myself up. Only thing is I have no idea how to cook it haha
Does anyone know the cut of meat? I know its a rib is it a specific type or cut? If I know I can research the best cooking method
I only have an oven and a frying pan and any cooking suggestions are welcome. I was thinking of oven baking it to a medium rare, then reverse searing it and basting with rosemary and butter to a medium (not sure of baking times haha)

Basically an untrimmed cross section of a rib roast, so a ribeye steak with a little extra bonus. I would treat this like a steak, though the bit along the side of the label might be a bit tough, just cut thin lol. Disregard time and cook to temperature. Now is a great time to snag a thermometer if you don’t already have one
Wow! What a gorgeous cut- looks like a bone in ribeye with the navel(?) still attached. Season heavily with kosher salt, freshly ground black pepper, and garlic powder. If possible, season the night before and leave uncovered on a wire rack in the fridge overnight. The next day, roast at 250-275 until the internal temperature reads about 132, more if you like it more on the medium side, and less if you really like it rare. Should take 1.5-2 hours. Then take the heaviest skillet you have, and preheat it on high heat. Add a little olive oil (the oil should smoke a little bit, if not pour it out and keep preheating the pan, if a lot of bad smelling smoke comes off turn off the heat and let it cool for a couple minutes) and hold the fat side down on the pan to render out some beef tallow. After you get a decent amount, sear the steak about 2-3 minutes a side, and a deep brown crust should form. Remove to a cutting board and let it rest for a few minutes before first slicing off the bone, and then cutting the steak. I’d also serve with a light side like a salad as this will be an incredibly rich meal. Enjoy! I’m jealous of hell, that’s an incredible looking piece of beef.
