Got top sirloin steak for $7 a lb. I don’t really know anything about steak cuts so I just buy what’s on sale and give it a shot. My three kids are all very young so was aiming for medium leaning to medium well. They loved it and so did I. There was no leftovers. Tried the dry brine this time and it worked out well I think.

Boggles me how a grown man has only cooked 3 steaks in their life… like did you never eat steak, mom cook it for you, vegetarian? What’s the story?

That’s a good looking sirloin. Looks like a strong medium, which is a bit too done for MY tastes.
Here’s some advice though, do crazy amounts of salt on it before you cook it. Let it rest at least 2 hours after you do each side. It pulls all the juices to the top. I rub one side of mine with Aldi Steak Seasoning and the other side with Pepper Palace Montreal Steak. Put it in the fridge to rest for 24 hours and flip it after 12.

Pretty fantastic looking medium. I’ve cooked a lot more than three steaks, and still have ones that come out worse than this.
If I’m going to give any constructive feedback, and it’s nitpicking, maybe let the steak get closer to room temp before throwing it on. The brown ring is more than just the crust and could be caused by state going on the griddle too cold.

I prefer sirloin more on the med rare side so this one is a little over for me. But that’s just me everyone likes their own thing. Looks delicious regardless. I would definitely still eat it.

I think about steak and wine in similar terms. “How do you know if it’s a good wine/steak? If you like it.”
