I bought this pasta, it's is filled with pecorino and pepper. However normally that's the sauce, now it's the filling. What would you do for sauce?

Butter and sage
Wessel100
I would do… Cacio e Pepe

In my opinion, the filling is already quite savoury on its own.
Usually, what I do in these cases is simply to drizzle some EVO oil and a bit of grated parmesan after serving it. Nothing else.

Don’t underestimate the simplicity. Often a good olive oil, is better than any topping <3

I would do cacio e pepe, a simple tomate sauce or just grate some italian cheese with a drizzle of olive oil!

Butter and sage, or just butter and Parmesan or just browned butter or butter (I love butter) you can do a fresh salad to go with it with some wine vinegar and olive oil or white balsamic and olive oil

Shallow fry them and serve as a starter with tiny drizzle of honey

Mm… my istinct says butter and that’s it. With some drops of honey on top. If that ravioli have a strong taste of cheese you won’t be disappointed. Another take wpuld be guanciale or pancetta. Just season them with the grease and put guanciale or pancetta on top, recreating a Gricia. You eat that pasta for ravioli flavour itself, so you do not want to down it into some heavy condiment.

Either, lemon, simple marinara or browned butter with white wine and sage

Brown some salted butter in a pan, add a tablespoon of olive oil and add 1 clove minced garlic, a small bunch of chopped fresh sage, add cooked pasta with a small amount of pasta water, toss in butter mixture, add a tablespoon of dry white wine, plate, top with a bit of finely grated Parmesan or pecorino and a sprinkle of freshly ground black pepper.
