When a recipe says yellow squash does that include yellow crookneck squash?
I am inundated with crookneck squash and want to try pickling some.

Yes. Now I’m wondering what other squash could be considered yellow squash.

It’s not a canning recipe (though I’m sure you could safely can a version of it) but yellow squash sautéed with with/without corn/onion but ALWAYS with green chiles was a staple growing up in New Mexico. Google “calabacitas recipe” if you’re interested.

I always stuff mine with pilaf, sausage, and a little cream cheese mixed in. Then bake until soft.
