Inspired by someone asking for easy meal ideas. My dinner from a few nights ago:
Seeds of Change Indian style super grains (microwaved), Heyday canned harissa chickpeas (heated on stove), pre-grated carrots, chopped tomatoes, cucumbers (veggies tossed with bottled tzatziki dressing), sliced avocado.
Not pictured but added later: quick pickled red onions (I always have some in the fridge, super easy, just sliced onions, vinegar, water, a little sugar, put in jar, keep in fridge, add to everything, SO GOOD).
I absolutely adore the Heyday canned beans. I find them at Whole Foods. I eat the Harissa chickpeas several times a week (really good beans on toast with broiled cheese on top, if you have a good sourdough loaf).
