I air fried some chick peas with some oil, diced an heirloom tomato, chopped some red onion, chopped some olives, some cucumber slices, curly parsley finely chopped, some finely diced garlic, used some follow your heart feta, dressed with a drizzle of olive oil and a splash of red wine vinegar. Threw on some salt and pepper, oregano and red chili flakes. One of the best dinners I’ve had all summer, this might be a desert island meal for me. All organic (except the cucumbers bc Whole Foods was out of organic).
