Servings: Two
1 cup penne pasta
2 cups fresh spinach
1 chopped Roma tomato
1/4 cup chopped onions
1 small can of mushrooms (fresh mushrooms preferred)
1 cup Alfredo sauce
1 grilled skinless chicken breast per serving
1/4 cup shaved parmesan or asiago cheese
1/2 teaspoon salt + 1/2 teaspoon freshly ground black pepper (add more to the Alfredo sauce if needed)

  1. I make it. I use a lot of fresh veggies. I like sliced yellow squash, peas, onions, halved cherry tomatoes, spinach, roasted red peppers. Sometimes I add pesto. Mine is vegetarian. I like penne too. Or shells. And I use fresh grated Parmesan, butter, heavy cream and a dash of nutmeg for my Alfredo sauce. I sautรฉ all the veggies in olive oil, then put all the sauce ingredients in the same pan once the veggies are done. When the sauce and veggies are done I add in the al dente pasta and heat everything together for a few minutes.

  2. Hello Tiffany, another cooking video, I love when you cook. Get you a supply of plastic gloves for when you have to touch meat, especially chicken because there's a risk of cross contamination with chicken. Enjoy.
