Hefty drizzle of evoo on medium heat, 1 chopped bell pepper, one diced yellow onion, let cook down until soft, stir in a couple heaping soup spoonfuls of tomato paste, 12 oz can of diced tomatoes, chili flakes, 2 minced cloves of garlic, salt, pepper, 8 eggs, cover until eggs are over easy, more evoo on top and garnish with cilantro.
I had mine with wheat toast and a sprinkle of feta! Amazing.
