I took this online course a few years ago just to refresh myself and see updated practices. You go at your own pace. It’s pretty basic and covers most food preservation techniques. This will cover many of your questions about how much and when to use lemon juice along with the correct way to use pressure canners and water baths.

I saw this recently.
I am so interested in taking that certified master food preserver course, and this looks like it’s basically the same thing. The only problem is you do not get the certification with this on-line course! Probably should take this and then just get certified if it ever becomes available in my area.
